Valentine’s Day is one of our favourites, we love any excuse to get some baking in and creatively show friends and family how much they mean. This delicious recipe incorporates one of our most popular teas, Strawberries & Cream, and a lovely naturally coloured pink icing! These cookies are also super quick and easy to make! We hope you enjoy them as much as we do!
2 cups flour
2tbsp ground Strawberries & Cream loose leaf tea
¼ tsp salt
½ tsp baking powder
1 cup sugar
¼ lb butter
2 tbsp water
½ tsp vanilla
2-4 cups icing sugar
Sift together the dry ingredients. In an electric mixer cream together the butter and sugar until fluffy. Add the egg, water and vanilla and beat well. Slowly add the dry ingredients and mix until well blended. Wrap in plastic and chill for 30 minutes before rolling.
Roll out to 1/8th inch thick and use a heart shaped cookie cutter, place cookies on a well-greased cookie sheet and bake for 10 minutes, or until the bottom edge of the cookies begins to turn brown. The cookies may appear soft and glossy on top, but will firm up once cooled
In a small bowl mash one or two strawberries until there are no lumps left, add to this icing sugar ½ a cup at a time until desired texture is achieved. Do not ice the cookies until they have fully cooled.
